Freezing and blast-freezing are often considered synonyms, but in reality, they are two profoundly different processes. The main difference lies in the time it takes for foods to cool.

In traditional freezing, cooling occurs slowly, whereas LIFE blast-freezing is a rapid process that, thanks to temperatures as low as -40°C, allows for the optimal preservation of food characteristics.

Have you ever tried to break a frozen slice of meat? It bends, because slow freezing alters the internal structure.

After a freezing cycle with LIFE, however, you will hear a clear and precise "crack." This is the result of micro-crystallization: water transforms into very small crystals that do not damage the cells.

This means that meat, fish, fruits, and vegetables maintain their original structure, without liquid loss and without changes in consistency. Once thawed, foods are as fresh as new, both in terms of cutting and taste.

Once the freezing cycle is complete, LIFE automatically switches to -18°C preservation mode until it is manually switched off

LIFE is not a freezer; you use it to rapidly freeze freshly cooked food. The air temperature will be -40°C, and the core temperature of the product will be at least -18°C. Once frozen, you will store the food in the freezer.

With LIFE, you can freeze any type of food. If the food is in a container, we recommend leaving it uncovered. However, for soups and broths, it is preferable to cover the container to improve efficiency. If you need to freeze diced or sliced products, we recommend arranging them on a baking sheet lined with parchment paper or in a shallow pan, avoiding overlapping.

No, the LIFE blast chiller does not require a condensation drain and does not need any connection to the water drain.

Yes, at the end of a blast chilling or freezing cycle, natural condensation may form inside the chamber. Once the program is complete, we recommend simply removing it with a sponge.

It is possible for water droplets to form due to natural condensation after a cooling cycle. We recommend drying the cooling chamber with a sponge, removing water from the bottom and walls.

Pre-chilling is used to bring the blast chiller to the ideal temperature before starting a chilling or freezing cycle. This makes the thermal shock on the product more effective and results in a better final quality.

We recommend cleaning the LIFE blast chiller at the end of each day of use. Once the cleaning cycle is complete, it is important to leave the door slightly ajar to allow the internal chamber to dry completely.
