Slow Cooking
Slow cooking, professional kitchen results
Low-temperature cooking allows for results that are difficult to achieve with traditional methods.
With LIFE, you can gently and precisely sous vide cook meat, fish, and vegetables, preserving their color, texture, and nutritional value. Lower temperatures prevent thermal stress and allow for even cooking, while time promotes the absorption of flavors.
The result is a softer, juicier, and more flavorful food, in which vitamins, proteins, and mineral salts are retained, without dispersion due to high temperatures.

Cook when you want, LIFE takes care of the rest
With LIFE, you can cook overnight and, at the end of the cycle, automatically program chilling or freezing to lock in the quality of your preparation. In the morning, you'll find the dish ready, already cooled, and safely preserved.
Alternatively, you can set the warm-holding function and find your dish ready to serve when you get home, just as if it had been freshly cooked.
You no longer have to adapt to the kitchen's schedule: the kitchen adapts to yours.

Marinate the fillet with oil, salt, marjoram and rosemary. Brown the meat in a pan for a few minutes, then place it in a baking dish, insert the probe and cook it with LIFE until it reaches 68°C in the core.
You can serve it hot or enjoy it after chilling it to +3°C.

Once the low-temperature cooking cycle is complete, LIFE automatically switches to holding, chilling, or freezing mode, depending on the choice made at the start of the program.
Preheating is useful for bringing the blast chiller to the desired temperature before starting a cooking cycle. Before a slow, low-temperature cooking cycle, it is advisable to preheat LIFE to obtain a more precise and uniform result.
The heating time of a LIFE blast chiller can be longer than that of a traditional oven because the heating elements are designed to ensure maximum precision and thermal stability, two fundamental aspects of controlled cooking processes.
It is recommended to cook food that has been previously vacuum-sealed in bags suitable for cooking. The protection of the bag prevents the creation of unpleasant odors and allows for minimal use of seasonings.
LIFE is not an oven and does not replace high-temperature cooking functions.
We recommend cleaning the LIFE blast chiller at the end of each day of use. Once the cleaning cycle is complete, it is important to leave the door slightly ajar to allow the internal chamber to dry completely.
