Sponge cake with custard is one of the most loved desserts by young and old alike. We propose a tasty mint and lime variation. Thanks to the LIFE blast chiller, the sponge cake and custard will last longer and maintain a more intense flavour. During cooling, they are not exposed to the temperature range between +65°C and +10°C, where bacteria proliferate, causing loss of quality, which is precisely what happens when we leave a cooked product to cool at room temperature.
Ingredients for the Mint Sponge Cake
- 250 g flour
- 240 g sugar
- 130 ml water
- 120 ml extra virgin olive oil
- 85 g mint syrup
- 3 eggs
- 1 sachet vanilla powder
- 1 sachet baking powder
Ingredients for the Lime Cream
- 500 ml whole milk
- 100 g brown sugar
- 50 g 00 flour
- 3 eggs
- grated lime zest
Sponge Cake preparation
Whisk the eggs and sugar together for about 3 minutes, until the mixture is light and smooth. Add the extra virgin olive oil and water, then gradually incorporate the flour, vanilla powder and baking powder. Continue mixing until all the ingredients are fully combined, then slowly pour in the mint syrup.
Grease and flour the individual silicone moulds, filling each cavity no more than halfway. If you do not have silicone moulds, you can use a small baking tin or muffin cups instead.
Bake in a preheated oven at 180°C for approximately 40 minutes.
While the sponge cake is baking, pre-chill the LIFE blast chiller to -15°C.
Once baked, remove the cake from the oven and let it rest for about 2 minutes. Then place it in the LIFE blast chiller and start the following program using the core temperature probe: BLAST CHILLING > DESSERTS > SPONGE CAKE.
When the blast chilling cycle is complete, the LIFE blast chiller will notify you with its distinctive audible signal.
Pastry Cream Preparation
Place the brown sugar, flour and grated lime zest in a blender and process until well combined. Add the fresh milk and eggs, then blend until the mixture is smooth.
Transfer the mixture to a bain-marie and cook over low heat for 30 minutes, stirring continuously to prevent lumps from forming, until the pastry cream reaches the desired consistency.
Meanwhile, pre-chill the LIFE blast chiller to -15°C.
Pour the pastry cream into a shallow tray and start the following program:
BLAST CHILLING > DESSERTS > CREAMS
Once the cycle is complete, assemble the dessert by layering the sponge cake with the chilled pastry cream and decorate as desired.
