Gnocchi di patate...in 3 minuti

Potato gnocchi are one of the most beloved Italian dishes, but they are increasingly less often made at home due to the long preparation times. Thanks to the LIFE blast chiller, you can return to the kitchen to knead these fantastic gems, preparing them in large quantities. The freezing function will allow you to store them perfectly for many months. When needed, you'll only have to drop the still-frozen gnocchi into boiling water, and in 3 minutes, they'll be ready and as delicious as if freshly made!

Ingredients

  • 2 kg potatoes (suitable for gnocchi)
  • 720 g flour
  • 380 ml water
  • 200 g Grana Padano cheese (grated)
  • 4 teaspoons fine salt
  • 4 eggs
  • a pinch of nutmeg

Preparation. In a saucepan, boil the potatoes with their skins over very low heat for 30-40 minutes. When cooked, drain them, peel them while still hot, and mash them with a potato masher or a fork. On a work surface, create a mound of flour, add the mashed potatoes, egg, grated cheese, salt, and nutmeg. Carefully mix the ingredients until you get a compact and soft dough. If the potatoes are watery, you will need to add a little flour, but be careful not to overdo it. In this case, it is preferable to use less water. Form logs 2-3 cm thick and cut them into small pieces to make gnocchi. Cook them in boiling salted water for a few minutes. When the gnocchi are cooked, they will float to the surface and are ready to be seasoned. All the gnocchi you haven't cooked are ready to be frozen with a blast chiller. Cover one or more LIFE blast chiller racks with parchment paper, sprinkle with flour, and arrange the gnocchi on top. Place them in the LIFE blast chiller and start the FREEZING ˃ PASTA AND RISOTTO ˃ GNOCCHI program. Once frozen, divide the gnocchi into different bags and store them in the freezer. When needed, you just have to cook them in boiling salted water directly from frozen, and in 3 minutes you can enjoy your homemade gnocchi. Fantastic, right?! Enjoy your meal!
