Low-temperature cooked octopus using the LIFE blast chiller is an extraordinary dish rich in protein. Thanks to the flexibility of your blast chiller, you can buy freshly caught octopus and manage the entire cold chain independently. Freezing will relax the fibers, and even months later, you can cook the octopus at a low temperature directly from frozen.
INGREDIENTS
- 1 Kg fresh octopus
- 500 ml Amarone wine
- 300 g cherry tomatoes
- 250 g cannellini beans
- 1 medium carrot
- Whole milk to taste
- Oregano to taste
- Salt to taste
- Sugar to taste
- Extra virgin olive oil to taste
Pre-cool the LIFE blast chiller to -20°C. Clean and freeze the octopus by starting the FREEZING > FISH > WHOLE program. We recommend freezing it at least one day before cooking. If you wish to freeze a larger quantity of octopus, you can store it in the freezer.
Preheat LIFE to 85°C. Place the octopus in a vacuum bag suitable for cooking and vacuum-seal it. Cook the octopus at low temperature using the SLOW COOKING function > at 72°C for 11 hours. At the end of cooking, set the BLAST CHILLING program.
Halve the cherry tomatoes lengthwise and place them on a perforated tray lined with baking paper. Sprinkle with equal parts of sugar, salt and oregano, mixed together. Place the tray in the LIFE blast chiller and start the DRYING program > at 60°C for 4 hours.
In a small saucepan, gently simmer the wine with the carrot cut into small pieces until reduced to a glaze.
Boil the beans and blend them with enough milk to obtain a smooth, creamy consistency. Add salt.
Once the octopus has been slow-cooked and chilled, cut it into bite-sized pieces and sauté in a pan with a drizzle of oil.
