Flan di zucchine, crema di piccadilly e porro croccante

Zucchini flans are a versatile dish! They can be served as an appetizer, enjoyed as a main course, or accompany an aperitif. Using the LIFE domestic blast chiller allows you to chill or freeze the freshly cooked flans and store them for a long time. Their texture, softness, and nutrients will be preserved, and after safe thawing with LIFE, they will be ready in just a few minutes.

INGREDIENTS FOR 5 FLANS

  • 500 ml peanut oil
  • 300 g Piccadilly cherry tomatoes
  • 125 g whole milk
  • 100 g all-purpose flour
  • 80 g grated Parmesan cheese
  • 25 g butter
  • 15 g flour
  • 2 zucchini
  • 2 eggs
  • 2 basil leaves
  • 1 shallot
  • 1 leek
  • Salt
  • Pepper

ZUCCHINI FLANS In a saucepan, bring the milk with the butter to a boil, turn off the heat, and add the flour, stirring with a whisk. Once fully combined, blast chill with LIFE: BLAST CHILLING> CREAM SOUPS
Sauté the shallots and cook the zucchini, cut into rounds, until very soft. Combine the zucchini with the roux, eggs, Parmesan, and basil, then blend. Strain the mixture through a sieve and fill aluminum molds. Place the molds on a perforated tray and bake the zucchini flans in a steam oven for 45 minutes at 85°C. Alternatively, place the molds in a baking tray and fill it with water until it reaches halfway up the molds. Bake with a static program for 50 minutes at 180°C. Pre-chill the LIFE blast chiller to -15°C. Once cooked, blast chill or freeze the zucchini flans with LIFE. After freezing, remove the flans from the molds, place them in a container, and store them in the freezer. When needed, defrost with LIFE: DEFROSTING > VEGETABLES > LARGE PIECES
CREAM AND GARNISH
Cut the cherry tomatoes and cook them over low heat for 20 minutes. Once cooked, blend and strain through a sieve. Cut the leeks into julienne strips, flour them, sift them, and immerse them in boiling oil for a few seconds. Drain them and let them dry on absorbent paper.
