Gnocchi arrostiti, crema di fagioli all' anice, crudo e gelè di cavolo cappuccio

Roasted gnocchi are an original variation to propose as an alternative to the classic recipe. Using the LIFE domestic blast chiller speeds up preparation times, reducing waiting between stages. With LIFE, you can also freeze cooked gnocchi to serve later. Even when you're short on time, you have a dish of excellent quality, homemade with selected ingredients.

INGREDIENTS FOR 4 PEOPLE For the gnocchi:

  • 500 g potatoes
  • 100 g all-purpose flour
  • 20 g egg yolk
  • salt
  • one slice of prosciutto, 5 mm thick

For the anise-flavored bean cream:

  • 200 g cannellini beans
  • 100 ml whole milk
  • star anise

For the jelly:

  • half a red cabbage
  • 1 teaspoon Agar Agar

Pre-chill the LIFE blast chiller to -15°C. Boil the potatoes and cool them for 10 minutes with LIFE in PRESERVATION mode at-15°C. Knead and shape the gnocchi. Bring a pot of salted water to a boil, then cook the gnocchi for 30 seconds, drain them, and blast chill them with LIFE. If you don't consume them within a few days, you can deep freeze them with LIFE immediately after draining. When needed, you can defrost them with LIFE and reheat them in a pan to brown them. Boil the milk with 3 star anise pods, turn off the heat, and let it cool for 1 hour at room temperature to infuse the flavor. Strain the milk, add it to the beans, and blend with an immersion blender until the desired creaminess is achieved. Strain with a sieve to remove any skins and residues. Submerge half a red cabbage in a pot of cold water, turn on the heat, and wait for the water to reach the desired color. Drain the leaves and collect 200 ml of liquid. Cool with LIFE for 15 minutes at -10°C, then add a teaspoon of agar-agar, mix, and heat until the desired consistency is achieved. Dice the prosciutto and brown it in a pan. Spread the bean cream on the plate, arrange the gnocchi previously roasted in the pan, and decorate with drops of cabbage and diced prosciutto.
